Honey Garlic Chicken Stir-Fry from the Kitchen of Malindi Elmore

Canadian 1500-meter specialist, Malindi Elmore, just came off of a 8:57- 3,000 meter performance at last weekend’s University of Washington Invitational.  The 3-time Canadian National Champion and Olympian over 1500-meters looks to be in good form heading into this Olympic year. Elmore holds personal bests of 4:02:64 and 15:12:12 in the 1500m and 5,000m events respectively.  Elmore is best known for her incredible range on the track, and for being a leading advocate for Canadian track and field athletes.

As a veteran in our sport she understands the importance of recovery and proper fueling and while she claims she doesn’t care to follow recipes she shared with us a recent concoction.

Honey Garlic Chicken Stir Fry

Olive oil
2 green onions
1 red pepper
2 small chinese bok choy
handful of snow peas
handful of bean sprouts
1 C of short grain brown rice
2 chicken breasts
1/2 C prepared honey garlic sauce


1. Prepare the rice as directed
2. Chop all veggies / chicken
3. Heat stove on high, when hot drop to medium and coat pan in olive oil. Toss in chicken. When brown on each side, throw in red peppers and onions and stir for a few minutes. Add other veggies and toss in sauce. Stir fry for a few more minutes. Serve over brown rice and sprinkle with sesame seeds (optional).
