Quinoa is a complete protein, which means it contains all of the essential amino acids, which are necessary in the diet, making it an ideal choice for vegetarians. 1 cup of Quinoa
2 cups of Water
1 Seedless Cucumber diced
2 Pints of Cherry Tomatoes diced
1 Avocado diced (if you want you can double this)
3/4 cup of Feta Cheese diced
Greek Salad Dressing to taste
1/2 cup Basil chopped (optional)
Cook the 1-cup of quinoa as per the directions on the back of the package. Allow cooling for 1 hour. Pour into a salad bowl. Add the rest of the ingredients and dress with the Greek dressing just before serving.
